Grape Pickers' Potatoes

I had to try this recipe based on the sheer amount of bacon required. It's another Winter Food recipe.


It didn't turn out quite as I had expected, so I'll have to try it again. I blame user error for it being soggy and undercooked. The recipe recommended a cast iron dish which I think would have made the outside crispier. I also kept it covered the entire time, which I assume made it soggy. I'm still confused about the potatoes being undercooked, it was in for over an hour.

After cooking it a bit longer we had it with a side of spinach and apple salad.
