When I was trying to decide what to make for dinner, I searched for 'fish and rice' on epicurious. This recipe – Wild Rice with Smoked Fish and Snap Peas came up... so that's what we had for dinner.

I would describe it as a variation on a Niçoise Salad, but better! Yes, better! I'm giving it 5 stars... my first 5-star rating. That's how good it was.

Something about the eggs really appeals to me. Looks hearty in a non-traditionally hearty way.

On another note- here's hoping you can crack open a bottle of prosecco or 3 very soon… fingers crossed!
