Grouper with Spinach and Mash



Coming back from vacation is brutal, especially when the transition is from warm waves and pink sand to the eternal twilight of winter. I looked out my window Saturday morning and this is what I saw... is it day or night? WTF! I'm ready to sell an organ to get out of here again.

The only thing we could do is try to recapture a little vacation magic, so we suited up and headed off to the market. I wanted Grouper or something to remind me of the fresh fish we had everyday on va-cay. I also wanted to get the secret ingredients to make... you guessed it Piña Coladas!

Fusili made a delicious reduction of soy, lime juice, honey and ginger. It went perfectly with the pan seared Grouper, spinach and mashed potatoes. Grouper kinda tastes like chicken.

Lamb Spinach Feta Pasta

Taking a break and having some comfort food before the New Year's extravaganza. Multi-grain fusilli with lamb sausage, spinach and feta cheese.


Shout out to Francis who gifted an excellent bottle of Chilean Santa Alicia Merlot to accompany the meal.

Leftovers

If I had a restaurant, I think this open face sandwich would be on the menu. It combines leftovers from the past few days, and it wouldn't have occurred to me, if I hadn't had this collection of ingredients. I baked the Walnut bread with the fall-aparty pot roast to heat it through. Then I topped it with chopped spinach and drizzled the whole thing with leftover orange chipotle sauce from the duck. S'nice.

BBQ Salad?

Short of throwing the spinach on the grill and figuring out how to melt the goat cheese on the same gril, we bbq'd everything else. Roasted peppers and onions turned out great and you can't really see the pancetta in there but trust me, it is... I think we just put a little balsamic and oil on this one but with all the sweet vegetables adding a little lemon into the dressing wouldn't hurt.

Bachelor spinach salad


Sometimes you have to make due with eating left-overs alone. That's not an excuse to eat from the pot, standing at the sink. For example, try a nice spinach salad with last night's grilled chicken and some extra feta. Finish with an olive oil, hazelnut oil, sherry vinegar and lemon juice dressing and voila! Bachelor spinach salad.

To lighten the mood, add Pascual Toso – Malbec 2006.

And finish off with a truffle from Soma Chocolate. This one is called "Arbequina" estate Olive oil. It's filled with an earthy tasting ganache that says "I'm eating alone, and I'm not sharing."
