Lemon Penne with Broccoli & Bacon


I'm thinking about changing our name to Broccoli & Bacon – I'm totally obsessed with the combo. In fact, I almost made broccoli wrapped in bacon, but I decided that would be too weird. Bacon wrapped things always sound better than the end result.

I made a light sauce with white wine and lemon juice, and then topped it with lemon rind to add some brightness. The Peperoncini from Terroni brought the heat.

  1. Even though I'm vegetarian I remember bacon being the S@#T. I say wrap whatever you want in bacon, it will for sure taste delicious. Don't tell PETA I said so.

  4. THE RECIPE:
    • Blanch broccoli in boiling water, set aside
    • Use the same water to boil the pasta
    • Cook bacon, set aside reserving 1 tbsp of oil in pan
    • Sautée onions and garlic until soft
    • Add a good splash of white wine and reduce
    • Add 2 tbsp of lemon juice and half the zest
    • Add cooked pasta, broccoli and bacon
    • Heat through and toss
    • Plate and sprinkle remaining zest over top
    • Drizzle with chili oil
